Sabra was established to promote community togetherness. Owners Helen and Monty wanted to serve kosher, high quality
authentic food that will remind the diners of their roots.

It seems to work well. Monty is the operations manager and entertainment coordinator. He comes to Tucson with over 30 years
of business and managerial experience. He opened and managed a company that produced promotional items. Monty was a
singer in the Israel Army group "
Golani" and was an entertainer in Las Vegas. Monty established "Hallelujah", a Los Angeles
restaurant and nightclub where he performed. Monty wants to enhance Tucson with a place for people to enjoy Mediterranean
culture.

Helen is the golden hands behind food preparation. "I love to cook and see people enjoying my creations" she says. Helen has
studied all over the world to perfect her culinary talents. Her love for cooking began in her home, watching her mother and
grandmother prepare family favorites. Helen studied at
Tidmor Culinary School in Israel, Le Cordon Bleu in Belgium and at
Seneca College
in Canada. Helen worked for the Israeli government in Kenya, Africa. During her free time, Chef Helen taught
Israeli cooking to the chefs in the resorts and hotels of Nairobi. When the Israeli army or dignitaries visited, they were able to
eat a home cooked meal.

Since moving to Tucson, Helen has catered various affairs for Congregation
Young Israel, Congregation Anshei Israel, and
Temple Emanu-El
. Helen has catered many private parties, holiday meals and meals of consolation.

"Sabra is a dream come true," remarks its head chef. "My goal is to incorporate Jewish and Israeli recipes for all to try. I want
people to feel at home here. They can dine on healthy kosher food while enjoying friends, Israeli music, live entertainment or
Karaoke." Sabra's success can also be attributed to
Chef Aaron Hilliard, former Executive Chef of "Charles Restaurant" a
Four Diamond French Continental Restaurant. Chef Aaron is a native of Chicago who has resided in Tucson for twenty years. He
apprenticed under four accomplished World Class Chefs and is trained in a variety of ethnic cuisines. Aaron prides himself in the
ability to offer a wide range of diverse culinary delights. His is a saucier, specializing in sauces, soups and stocks. Aaron has
trained as a butcher, ice carver and baker as well.

Sabra is not only a kosher restaurant. It is also a kosher caterer providing delicious food and service for weddings, parties,
gatherings, conferences etc.

Sabra Mediterranean Restaurant is Kosher and under the supervision of Rabbi Israel Becker of Congregation
Chofetz Chayim and Rabbi Joseph Shemtov of Congregation Young Israel Chabad-Lubavitch.
